In the Kitchen: Gluten Free Oatmeal Chocolate Chip Cookies

It's the end of the week, which means it's time for a yummy recipe to try over the weekend! My dear friend Hannah (a baker extraordinaire!) is here today with a delightful oatmeal cookies recipe. Since my family doesn't love raisins, I had her sub those for chocolate chips. Oh yes, that is more like it! While she's here at my blog today, I'm over at her blog sharing some of my Fall Favorites. Hi, Michaela Noelle Designs readers! I'm Hannah, from Sweets & Celebrations, and I'm thrilled to be here today guest posting for my dear friend Michaela. Since she recently started eating gluten free, I thought it would be fun to adapt my grandma's delicious oatmeal chocolate chip cookie recipe into a gluten free one that she can enjoy. And guess what...the new version turned out to be just as scrumptious as the original! Give it a try. 

 You'll need: 
 1/2 cup unsalted butter 
 1/2 cup coconut oil 
 3/4 cup brown sugar 
 3/4 cup sugar 
 1 egg 
 2 egg whites 
 2 teaspoons vanilla 
 1/2 teaspoon salt 
 2 cups white rice flour 
 2 cups oats
 1 teaspoon baking soda 
 2 cups semi-sweet chocolate chips

Instructions: Preheat your oven to 375. In the bowl of a stand mixer or using a hand held mixer, cream together the butter, coconut oil (I used half butter and half coconut oil to make it a bit healthier but you could replace the coconut oil with butter to make it more decadent or vice versa to make it lighter,) brown sugar, and sugar. Add the egg, egg whites, vanilla, and salt and mix well. Add the flour, oats, and baking soda, and beat at low speed. Gently fold in the chocolate chips. Line a baking sheet with parchment paper and scoop out cookies. I use a 1.5" ice cream scoop to ensure that the cookies are all the same size. Bake for 8-10 minutes until almost slightly browned. I prefer mine doughy, but just make sure not to over bake them.
